Protein Granola Bar
Looking for your new favorite breakfast on-the-go? Get ready for these Vegan Protein Granola Bars because once you make them you will be in love! These protein packed bars are chewy and subtly sweet. 1/3 cup cashews, finely chopped
1/3 cup sliced almonds
1/2 cup rolled oats
2 Tbsp chia seeds
4 Tbsp raw hemp hearts
3 Tbsp unsweetened coconut flakes
3 Tbsp ground flax seeds
1/2 Tbsp cinnamon
4 Tbsp monkfruit sweetener or another granular sweetener of choice
3/4 cup vegan protein powder
1/8 Tbsp kosher salt
4 Tbsp liquid sweetener of choice (sugar free syrup, maple syrup, coconut syrup, or any other liquid sweetener)
2.5 Tbsp liquid coconut oil
3 Tbsp creamy peanutbutter or almond butter
2 tsp vanilla extract
Optional: 1/2 Cup chocolate chips for a chocolate drizzle (I use stevia sweetened chocolate by Lily's)
Preheat the oven to 350F,
In a large bowl, add all of your dry ingredients and mix until completely combined,
In a separate small bowl, mix your wet ingredients (liquid sweetener, coconut oil, nut butter and vanilla) until completely combined,
Add the wet ingredients to the dry ingredients and mix well until all ingredients are fully coated. The texture should be like a wet crumble,
Line an 8x8 baking dish with parchment paper and grease the parchment paper (I use parchment paper so it is easy to pop out the bars from the pan),
Pour the mixture into the parchment lined pan and use your hands or a spatula to press the mixture down so it is densely packed into the pan,
Bake for 23-25 minutes and then allow to cool completely before removing from pan (very important to allow the bars to cool completely so they harden a bit),
Once completely cooled, remove from the pan and cut into 10 bars.
Optional: drizzle melted chocolate over the bars for an added layer of sweetness.
Storage: store in an airtight container on the counter for a week or in the fridge for 10 days and enjoy.
