Massaged Kale Salad
Want to know how to make kale taste delicious? Massage it! If you're not eating your kale this way, you're simply doing it wrong! I was not a fan of kale until I started to make it this way and now it's my favorite salad ever! The rich and bitter kale takes on a new flavor when it's prepared following this recipe and i'll never turn back.
10 Ounces of curly kale (washed, dried and de-stemmed)
1/2 Cup sliced and toasted almonds
1/2 Cup breadcrumbs (for a low carb option, swap for nutritional yeast or shredded parmesan cheese)
1 Lemon, juiced
1/2 tsp salt
1/2 tsp black pepper
Add the washed and deveined kale to a large bowl.
Peel and remove the pit from the avocado and add the avocado meat to the bowl. Add lemon juice, salt and pepper to the bowl.
Use clean hands to firmly massage the kale for about 3 minutes or until the avocado has mashed to fully coat the kale and the kale is tender and soft.
Add the sliced almonds and nutritional yeast (or cheese) to the bowl and toss to incorporate. Serve on its own or top with protein of choice. Enjoy!
Storage: store in an airtight container in the fridge for up to 3 days.
