Ingredients

  • 1 Large Head Iceberg Lettuce, roughly chopped

  • 2 Medium Tomatoes, chopped

  • 1 (15 oz.) Can of Corn, strained

  • 1/2 Cup Crumbled Blue Cheese

  • 1/4 Red Onion, sliced

  • 1 Avocado, cubed

  • 1/4 Cup Parsley, minced

  • 2 Tbsp Chives, minced

  • 3 Tbsp Extra Virgin Olive Oil

  • 1 Lime, juice

Directions

  1. Wash, dry and roughly chop the lettuce. Add to a large bowl.

  2. Chop the tomatoes and add to the bowl. Cube up the avocado and slice the onions. Add to the bowl. Add in the strained corn, minced parsley and chives.

  3. Top the salad with olive oil and the juice of one lime. Toss to fully combine and enjoy.

Storage: If not serving immediately or preparing ahead, save the olive oil and lime juice to add just before serving. Store in an airtight container in the fridge for up to 5 days.
