Seasonal Brussel Sprout Salad



  • 1-1.5 lbs shredded Brussels sprouts

  • 1 bag of kale, chopped

  • 2oz goat cheese (or cheese of choice)

  • 1/2 cup pomegranate seeds

  • 1/4 cup pumpkin seeds

  • 2 tbs olive oil

  • Juice of 1 lemon

  • salt and pepper


  1. To a large bowl, add the shredded Brussels sprouts, kale, olive oil, lemon juice, salt and pepper,

  2. Massage the kale and Brussels sprouts well, ensuring that all of lettuce is coated (don't be afraid to use some force so the lettuce softens and is easier to chew),

  3. Before serving, add the pomegranate seeds, pumpkin seeds, and goat cheese
