Vegan Tagalong Girl Scout Cookies (grain free)

RECIPE:

INGREDIENTS: - 1 Cup Almond Flour - 2 TBSP syrup (maple or sugar free) - 6 TBSp peanutbutter - 3 TBSP coconut oil - 1 TBSP Monkfruit or sweetener of choice . - 1 Cup vegan chocolate ✔️INSTRUCTIONS:

  1. Mix almond flour, 2 Tbsp coconut oil, 2 Tbsp of syrup, and monkfruit to form dough. Roll the dough into 8 balls and place on a greased baking sheet. Gently flatten the balls and make a thumb-print impression in the center of each cookies to create a small divot (where you will place the peanutbutter later),

  2. Bake Cookies at 350 for 10-12 minutes,

  3. When the cookies are done baking, remove from the oven and drop a teaspoon size amount of peanutbutter into the center of each cookie. Place the cookies in the freezer for 30+ minutes,

  4. When cookies are hardened and the peanubutter is no longer sticky (about 1 hours), remove cookies from freezer,

  5. Melt the chocolate and 1 tbsp of coconut oil,

  6. Dip each cookie in the chocolate and use a fork to gently place the cookies on a parchment lined plate or tray to cool,

  7. Place cookies in freezer to set for at-least 30 minutes. ENJOY!
