Healthy Peanut Butter Cups



  • 1.5 Cup chocolate chips (vegan or sugar free chips work here)

  • 1 Tbs coconut oil

  • 1/2 Cup nut butter (peanut butter or almond butter work well)

  • 2 Tbs ground flax seeds

  • 2 Tbs chia seeds


  1. Line a muffin pan with liners (or use a silicon muffin pan) (TIP: use a mini muffin pan for mini cups),

  2. Melt chocolate and coconut oil,

  3. Spread 1 Tbs of melted chocolate in the base of each cup (save half of the chocolate for later). Place the pan in the freezer or fridge to set for a few minutes,

  4. Meanwhile, mix the nut butter, flax and chia until fully combined,

  5. Drop 1 tsp of the nut butter mixture into each chocolate cup,

  6. Cover the layer of nut butter with the remaining chocolate and place in the freezer to set.
