Healthy Peach Cobbler (low carb, grain free, dairy free)

This week I attended an event and there was a discussion on hosting that truly resonated with me. Especially during summer, whether I am the one hosting guests or I am an invitee, there is a stigma around the meal, pressure to offer (and eat) decadent dishes that don’t necessarily align with my own values and goal. Pressure from social environments and societal norms lead us to feel that it is “rude” to pass on a dessert when it is offered to you, and that guests will be dissatisfied or unimpressed if you don’t serve them a full meal followed by dessert.


What I am coming to realize is that, it is OKAY to make a choice to stay true to you! There will always be someone who has something to say about what you are doing, but the only critic that truly matters is you. Most of the time, I find that guests are thrilled when they have a DELICIOUS AND HEALTHY meal and without guilt!



My go-to move for hosting or attending a gathering that surrounds food is to make a dish that is aligned with my goals and I bring/serve that! When I bring something that I know everyone, including myself, will enjoy, I ensure that I am prepared for success!



This low carb, grain and dairy free version of my favorite summer dessert is the perfect treat to serve at a brunch or BBQ that will satisfy everyone at the table without the guilt!


RECIPE:

  • 1 cup almond flour

  • 1/4 cup coconut flour

  • 1/4 cup monk fruit sweetener

  • 1/2 tsp cinnamon

  • 1/4 cup coconut oil

  • 1 egg

  • 1 cup of peach slices

  • 1/2 cup sugar free peach jam or peach preserves

  • pinch of salt



✔️Directions:


  1. Preheat the oven to 350F,

  2. In a large bowl, whisk together the the almond flour, coconut flour, monkfruit, cinnamon, and salt

  3. Next, add the egg and coconut oil, then mix to combine thoroughly and to form a dough,

  4. Line a baking dish or loaf pan with parchment paper to make sure it pops out easily,

  5. Press about 2/3 of the dough into the baking dish create and even layer on the base,

  6. Bake the base for 30 minutes,

  7. Remove the base from the oven, it should be golden brown, and spread the peach jam on top of the base, then layer the peach slices of the jam layer,

  8. Crumble the remaining dough on top of the peach and jam layer to create the crumble,

  9. Bake for an additional 25-30 minutes or until the crumble is golden.

  10. OPTIONAL: Before serving, optional to add a few teaspoons of peach jam/preserves to the top for garnish.


ENJOY this on its own, or with a scoop of Iced cream as a lovely dessert!
