Double Chocolate Cake Donut (low carb, high fiber, grain free)

RECIPE:


✔️INGREDIENTS (Makes 8 Bagels)

  • 1/2 C Almond Flour

  • 1 TBS Flax Seed

  • 1/3 Cup monkfruit sweetener (i use Lakanto brand)

  • 2 TBS cocoa powder

  • 1 TBS Coconut flour

  • 1 tsp Baking Powder

  • 6 TBS Inulin Powder (start slow—if you haven’t been eating a high fiber diet, start with 3 TBS), I recommend @simplygangsterchic

  • 3 Eggs

  • 4 TBS raw tahini (I use @wholefoods365 Brand) OR any creamy nut butter of choice

  • 2 TBS Fiber Syrup (I use @choczero )

  • 1/4 tsp salt

  • 1/3 Cup chocolate chips (i use Lily’s chocolate)

  • 1 tbs coconut oil


✔️INSTRUCTIONS:

  1. Preheat oven to 375F,

  2. In a large bowl, mix the dry ingredients thoroughly. Then add in the liquid and mix all ingredients until fully combined (saving the chocolate chips and coconut oil to top),

  3. Grease a donut pan (make sure to grease it well so the donuts pop out),

  4. Pour batter into a greased donut baking tray,

  5. Bake at 375F for 18-20 minutes,

  6. When the donuts are out of the oven, allow them to cool,

  7. While donuts cool, melt the coconut oil and chocolate (either in a double boiler or microwave),

  8. Drizzle the melted chocolate on top of the donuts (you can eat the donuts right away or allow the chocolate to set and then store in a container)

Store in the fridge for up to 1 week.
