Double Chocolate Zucchini Brownie (low carb, grain free)

RECIPE:


- 4 eggs

- 1 zucchini, grated and drained of liquid

- 1/2 C almond milk (or nut milk of choice)

- 1 tbs vanilla

- 1/3 cup monk fruit sweetener

- 1 cup almond flour

- 1/3 cup coconut flour

- 4 scoops chocolate protein powder of choice

- 2 tbs coco powder

- 1 tsp baking powder

- 1/2 tbs cinnamon

- 4 tbs coconut oil

- 2/3 Cup Stevia Sweetened chocolate chips or dark chocolate chips (1/3 cup for the batter and 1/3 cup to top)


Directions:

  1. Preheat the oven to 375F,

  2. Begin by melting 1/3 cup chocolate chips with the coconut oil (in the microwave or a double boiler),

  3. In a large bowl, combine the almond flour, coconut flour, Monkfruit sweetener, protein powder, coco powder, baking powder, and cinnamon,

  4. Add the eggs, drained/grated zucchini, almond milk, and vanilla, mix until combined,

  5. Add the melted chocolate and coconut oil mixture and whisk the batter until fully combined,

  6. Grease an 8x8 baking dish,

  7. Pour the batter into the baking dish and top the brownie with the remaining 1/3 cup chocolate chips,

  8. Bake for 35-40 minutes and ENJOY!
