Birthday Cake Cookie Bars (Low Carb, Grain Free, High Fiber)




RECIPE:


- 1/4 cup coconut flour @bobsredmill

- 1/2 cup @f_factor 20/20 Vanilla protein

- 4 tbs sprinkles

- 1 tsp cinnamon

- 1 tsp vanilla

- 2 tbs fiber syrup @choczero Or @sukrinusa

- 3 tbs coconut oil

- 4 tbs almond butter

- 1 tbs stevia or

- 1 tbs monkfruit sweetener or stevia

- 1/3 Cup stevia sweetened chocolate + 1 tsp coconut oil for the top coating (i use @lilys_sweets_chocolate )



✔️ Directions:

(1) thoroughly mix all ingredients except the lily’s chips and 1/2 of the sprinkles (saving 2 tbs to top the bars)


(2) line a 8x8 baking dish with wax paper,


(3) firmly press the mixture into the baking dish and create an even layer, make sure to press it firmly and get the edges, and place it in the freezer for 30+ minutes (longer is better)


(4) melt the chocolate and 1 tsp coconut oil,


(5) after the cookie base has settled in the fridge for at least 30 minutes (longer is better), melt the chocolate, remove the cookie base from the freezer and coat the top of the cookie base in the chocolate, then top with remaining sprinkles,


(6) place the dish back in the freezer for at least 1-2 hours,


(7) after the bar has firmed in the freezer for a few hours, remove, cut into 9 squares and ENJOY!
