Almond Crusted Salmon (low carb, grain free)




RECIPE:


INGREDIENTS:

  • 1 lb wild salmon

  • 4 tbs light sour cream

  • juice of half a lemon

  • 1/4 cup diced shallot (or onion)

  • 1 clove garlic, minced

  • 1 scallions stalk

  • 1 tbs almond flour

  • 3 tbs slices almond (can use regular almond and chop them up)

  • salt/pepper


DIRECTIONS:

  1. Preheat oven to 400F,

  2. Prepare salmon by sprinkling both sides with a pinch of salt and pepper, lay the salmon on a parchment lines baking sheet greased with olive oil,

  3. In a small bowl, whisk together the sour cream, lemon juice, diced onion and minced garlic,

  4. Spread the sour cream mixture on top of the salmon to cover the top,

  5. Sprinkle the almond flour over the mixture and then sprinkle the sliced almonds on top,

  6. Bake for 20-25 minutes,

  7. Remove from the oven and sprinkle with sliced scallions for garnish.
