Mexican Goddess Salad

Ingredients
1 Head iceberg lettuce, chopped
2 Persian cucumbers, julienned
5 Radishes, thinly sliced
1/4 Cup pickled jalapeños, diced
1/2 Cup cherry tomatoes, halved
1/2 Cup cooked rice
1/4 Cup fresh parsley, chopped
1/2 Cup queso fresco, crumbled
1 Avocado, diced
1/4 Cup extra virgin olive oil
2 Tbsp lime juice
1 tsp salt
1 tsp black pepper
Directions
In a small bowl, whisk together the olive oil, lime juice, salt, pepper and 2 tbsp of fresh parsley. Whisk until a lime vinaigrette forms and set aside
Add all of the remaining ingredients to a large bowl, including the cooked rice, and toss to fully combine
Pour the lime vinaigrette over the salad before serving and enjoy!
