These cauliflower mashed faux-tatos are perfect for meal prep or for a side, this recipe is simple and delicious.

Ingredients
1 Head of cauliflower, chopped into pieces smaller than golfballs
1/2 Cup shredded parmesan cheese
Roasted Garlic
salt and pepper
scallions to top
Directions
Prepare roasted garlic ahead by slicing the top of the whole head of garlic off, then drizzle with olive oil, salt and pepper, wrap in foil and bake in the oven at 400F for 45 minutes.
Once the garlic is nearly ready, steam cauliflower in a steamer on the stove top or in the microwave.
Add the steamed cauliflower to a bowl with the roasted garlic, salt, pepper and cheese.
Use an immersion blender to puree the cauliflower to the consistency you like.
Top with scallions and toppings of choice. Enjoy!
Storage: store in an airtight container in the fridge for up to 7 days.
