RECIPE:
Ingredients:
1 Cup almond flour
1/3 Cup coconut flour
1 Cup vanilla protein powder
1/4 Cup monkfruit sweetener
1 tsp baking soda
1/2 tsp cinnamon
3 eggs
2 small ripe bananas, mashed (important that the bananas are super ripe with brown spots so they are sweet and flavorful)
1 tsp vanilla extract
2 Tbs syrup (maple syrup or sugar free syrup)
1 Tbs coconut oil
1/4 Cup nut milk
Cinnamon Swirl Filling: whisk together 1.5 Tbs cinnamon, 1 Tbs coconut oil, and 1/4 Cup monkfruit sweetener
Directions:
Preheat oven to 375F,
Whisk together the dry ingredients and then fold in the wet ingredients and mashed bananas,
Line a loaf tin with parchment paper,
Pour 2/3 of the batter into the tin, then sprinkle a layer of the cinnamon swirl filling, and then top with the remaining batter,
Use a knife to swirl the layers together slightly (do not over mix). Option to add some banana on top for garnish,
Bake for 30 minutes, then cover with foil and bake for an additional 20-25 minutes. Allow to cool completely and enjoy!
Storage: store in the fridge for 7-10 days.
