🥔 MASHED FAUX-TATOS 🥔 These cauliflower mashed faux-tatos are perfect for meal prep or for a side, this recipe is SIMPLE and delicious. . RECIPE:

✔️INGREDIENTS:

  • 1 Head of cauliflower, chopped into pieces smaller than golfballs

  • 1 Wedge of laughing cow cheese (any flavor works, I chose swiss garlic herb)

  • Roasted Garlic

  • salt and pepper

  • scallions to top

✔️INSTRUCTION: pre steam cauliflower (in steamer on the stove top or in the microwave), using either an IMMERSION BLENDER (what I use) or a regular BLENDER, puree the cauliflower to the consistency you like, add all other ingredients and continue to puree. ENJOY ‼️‼️‼️
